It’s a salad, ok so maybe its loaded up full of other delicious items but it is still a salad. Well that’s at least what I tell myself right after I eat the whole bowl. I love this salad and I am not waiting for a special occasion to make this one again.
6 cups salad (I used a combination of arugula and baby spinach, any spring green mix will do)1 red apple1 green apple1 cup walnuts, roughly chopped⅓ cup crumbled feta cheese⅓ cup dried cranberries
1 cup apple juice, chopped into 1 inch chunks4 tablespoons apple cider vinegar2 tablespoons honeyscant ½ teaspoon salt¼ teaspoon black pepper¼ cup oil
Toss lettuce, apples, walnuts, feta, and cranberries together in a large bowl.Whisk together all dressing ingredients. Toss with salad immediately before serving. Enjoy!
