It’s finally chilly out and the girls have runny noses and so I knew I wanted to make a soup for dinner. I found this soup with sausage (my girls love sausage) while browsingDamn Delicious, one of my favorite recipe sites. I tweaked it a little but overall her recipe is phenomenal the way it is. Plus its super easy because it just sits in the crock pot for a few hours. I usually prep during nap time and let it cook until dinner. It was so “Damn Delicious”, the girls ate their entire bowl (getting veggies in them is a struggle) and even hubby went in for seconds.

1 tablespoon olive oil1 (12.8-ounce) package smoked andouille sausage, thinly sliced3 cloves garlic, minced1/2 onion, diced (the recipe calls for a full onion but a half was enough for me)3 carrots, peeled and diced2 stalks celery, diced2 (15-ounce) cans Great Northern beans, drained and rinsed1/2 teaspoon dried oregano2 bay leaves4 cups chicken brothKosher salt and freshly ground black pepper, to taste3 cups baby spinach ( I slice my spinach to make it easier for little ones to eat)
Heat olive oil in a large skillet over medium high heat. Add sausage, and cook, stirring frequently, until lightly browned, about 3-4 minutes.Place sausage, garlic, onion, carrots, celery, beans, oregano and bay leaves into a 6-qt slow cooker. Stir in chicken broth and 2 cups water until well combined; season with salt and pepper, to taste.Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours. Stir in spinach until wilted.Serve immediately.
